It’s the last week of spruce hen season, so we took the day to hunt a few birds for dinner. Back at camp, we smoked the meat and turned it into a campfire poutine—crispy fries, rich gravy, and melted curds over the fire. Spring is finally starting to show itself. The days are getting longer, the deep cold is breaking, and it’s time to start thinking about birch syrup, gardens, the fish wheel, and foraging again!
