Winter is here and we are turning our attention to winter hunting, trapping & nourishment to get through the coldest months in the north. We turned some fresh moose bones into a warming, nutrient dense broth. Using the whole animal is something that has been done for a very long time, and for good reason; it stretches the harvest, deeply nourishes, and honors the animal. We combined fresh moose bones, wild foraged mushrooms from the summer, herbs from the garden, and root veggies- simmered it away on the nearly 100 year old stove in the cabin while we worked on the first steps of tanning a beaver hide. While we fleshed the hide by the fire outside and broth simmered away on the cabin stove, we got to smoking the beaver and getting ready for dinner. While I stretched and nailed the hide to dry, Dennis came home with yet another delicious beaver and a pelt to make warm, waterproof clothes with. Smoked beaver, homemade lacto-fermented dill garlic sauerkraut, and roasted potatoes from the garden for dinner!
