COURGETTE ZUCCHINI FETA BASIL MINT LOAF YOU’LL NEED A 2lb LOAF TIN - if it’s not nonstick then please grease it or line it with baking paper 1lb 4oz / 560g Large diced Courgettes / Zucchini 3 Spring Onions - chopped 2 Cloves Minced Garlic 4 Tbspn EV Olive Oil 1 Teaspoon Butter 12 Basil leaves 1 Teaspoon Dried Tarragon 1 Teaspoon Chopped Mint ( Fresh if possible) 1 Teaspoon of each - Smoked Paprika & Onion Powder salt and pepper 8oz Crumbled Feta 4oz Grated Cheddar 5 Eggs 3oz SR Flour 10oz Milk or Cream Key pointers * Bake for about 45 minutes on 180c / 355f checking after 35 minutes - some ovens will cook quicker * Deseed your Courgettes to avoid excessive watering * Fry veggies for a good 10 minutes to develop all those flavours herbs and spices Tips * drizzle with olive oil if you’re serving this fresh out of the oven * you can use one variety of courgette zucchini or two * substitute feta with goats cheese if you don’t like feta Advice * this would be amazing with a mushroom pilaf rice dish here’s the link to my recipe * reheat it the next day in the oven or under the grill with a bit of extra cheddar * if you want to go full Greek serve it with a fresh cucumber tzatziki Please get in touch if you have any questions or queries relating to the recipe via the comment section below Good luck everyone & love you guys.
