Baked Pistachio Cheesecake 12 - 16 portions 23cm Springform tin • 500g soft cheese 18oz • 225g caster sugar 9oz • 3 tbsp cornflour • 1 tsp vanilla extract • 250g soured cream 10oz • 3 eggs • 40g pistachios, chopped 1.5oz • 4 tbsp pistachio cream, melted • 40g ground pistachios 1.5oz For the base • 400g Biscuits / Cookies 14oz Graham Crackers • 140g melted butter 6oz Key pointers * 10 minutes in the oven followed by 40 minutes on two different temperatures which are displayed on the video * add each egg individually beating well in between *  grinding the pistachios is essential for the topping Advice * buy pistachio cream not spread - the cream is essential for the topping * I would peel the pistachios before crushing them to go inside the cheesecake * raspberries, strawberries, blackberries, blueberries any fruit is lovely on top Tips * I would leave the cheesecake in the fridge overnight before topping it * you can use the light version of cream cheese if you prefer * the better quality vanilla you use the more luxurious the cheesecake Please get in touch by the comment section if you have any queries or any questions relating to the recipe.
