4 Fillets of Basa ( Pangasius Bocourti) Cup of flour 2 Beaten Eggs 1 Litre Oil - Sunflower or Veg Salt & Pepper French Remoulade One cup of good quality mayo Teaspoon of chives Tablespoon chopped parsley 2 tablespoons of chopped gherkins 1 tablespoon lemon juice 1 teaspoon of Dijon mustard One garlic clove minced Salt and pepper to taste Key Pointers * make sure the fish fillets are covered well in flour before dipping in egg * my frying pan is 2 1/2 inches deep - fill it up to 1 inch of oil * cook the fish fillets for three minutes for the first side, then flip over and cook for two minutes * oil temperatures - 170c - 340f Advice * if you can’t get Basa fish then you can use cod but if you use the thick of the cod , you will need to cook it for four minutes one side and three minutes the other side. If you use a tail end of the cod , which is the thin end then you won’t have to change your frying time * you could also use plaice or sole Tips * Add a squirt of Tabasco to the Remoulade * use vinegar instead of lemon juice * capers are also good if you have no gherkins Please get in touch by the comment section if you have any queries or any questions relating to the recipe.
