6 Chicken Thighs Skin on Bone in 150ml (6oz) Dry White wine 700ml Stock (25oz) 300 ml Cream (12oz) 2oz Butter 4oz finely diced bacon Bay leaf 1 medium onion sliced 3 Garlic Cloves minced 1 tbspn Dried Tarragon 1 teaspoon Thyme 5oz Sliced Carrots 1lb Leeks - white light green parts in 2” chunks ( dark green part finely sliced) 1 dessert spoon Dijon 3 tbspns flour 10 - 12 baby spuds - cooked 2 tbspns olive oil Key Pointers * Air fryer chicken thighs for 20 to 25 minutes on 200c / 390f turning once halfway through * Be strict with the leek preparation- dark green finely sliced. Light green and white 2 inch chunks. * any dry white wine is fine for this Advice * fresh leeks will do a much better job than frozen leeks * add an extra knob of butter to keep things moist * reduce the wine by half in the pan with the vegetables * turn off the heat to mix the flour into a paste Tips * it’s not compulsory to add the chicken juices, but it does make a big difference to the flavour * serve this with chunks of crusty bread * try and get the best quality chicken stock you can As usual, please get in touch if there’s anything else I can do for you relating to this recipe.
