Same day Sourdough - My Recipe 200g White bread flour 15% Protein Content 100g Seven Seed & Malt Bread Flour 100g Wholewheat/ Wholemeal Bread Flour 280ml Room temperature water 100g Active Sourdough Levain / Starter 1 teaspoon of salt ½ teaspoon of honey ½ teaspoon of extra-virgin olive oil Substitute Seven Seed Malt Flour with Seeded Rye Flour or use 300g White & 100g of Wholewheat Flour 1. BcMix Flour Levain & Water - 45 mins in microwave 2. Add extras - Stretch & Fold 45 mins in microwave 3. Stretch & Fold - 45 minutes in microwave 4. Stretch & Fold - 45 minutes in microwave 5. Coil Dough -  45 minutes in microwave 6. 1st Shape - 30 minutes 7.
