 Vietnamese Shredded Chicken Salad 2 Chicken Breasts Shredded ( Key Point 1) 2 cups white cabbage shredded 2 cups red cabbage , shredded 1 cup carrots , julienned 2 cups bean sprouts 4 green onions , finely sliced diagonally ½ cup coriander / cilantro leaves ½ cup mint leaves Crispy Onions (Salad Topping) For the Dressing 2 tbsp rice vinegar 2 tbsp soy sauce 2 tsp Thai fish sauce 2 tbsp lime juice Zest of a lime 1 tbsp peanut oil 1 tbspn sesame oil 1 tbspn honey ½ red chilli , finely minced (optional) 3 garlic cloves, grated Key Pointers * Poach two skinless and boneless chicken breasts in enough water to completely cover them for 15 minutes on a simmer from boiling. Season water with S&P & a bay leaf. * Once chicken is cold shred with two forks * Tear Mint leaves to release flavour Advice * The finer you shred cabbage the better the salad * use wine vinegar if you have no rice vinegar * Garlic is best grated on the smallest grate Tips * Add a handful of fresh raspberries for a twist * Crumble Feta if you fancy making it richer * Adding a few quarters of hard boiled egg is fabulous Let me know in the comments how you find the salad.
