College of Glycation

The College of Glycation is an educational video series dedicated to helping viewers understand one of the most critical and often overlooked processes in human biology: glycation. Led by Dr. Paul Reynolds, Professor of Cell Biology and Physiology at Brigham Young University, this series explores how sugar interacts with proteins and fats in the body, forming harmful compounds called Advanced Glycation End-products (AGEs). These compounds accelerate aging, contribute to chronic diseases, and play a key role in metabolic dysfunction. Each video is designed to break down complex topics into clear, practical insights. Whether you’re a healthcare professional, student, or simply someone seeking to improve your health, this series will give you a deeper understanding of the biological roots of inflammation, insulin resistance, and cellular damage—and what you can do to address them.

Topic Are we eating too much protein? Why the answer is age-stratified, why the RDA is a floor rather than a target, and why how you cook protein may matter more for glycation than how many grams you eat. Quick summary Serious scientists still land on opposite sides of the protein question because they are often describing different people. In midlife, higher protein tracks with more growth signaling (mTOR, IGF-1) and, in one widely cited cohort, higher mortality — especially when the protein is animal. After about sixty-five the same association flips, and older muscle needs more protein per meal to cross the leucine threshold and hold onto mass. Muscle is also your largest glucose sink, so losing it raises the glycation burden. Healthy kidneys are not damaged by higher protein in trial data; already-damaged kidneys are a separate clinical problem. Protein leverage helps explain why a protein-forward plate often works: it pushes ultra-processed, protein-dilute food off the plate. The glycation catch is cooking. Dry heat can raise dietary AGEs 10- to 100-fold, and browned animal protein is the largest dietary AGE source in a typical diet. Moist heat, lower temperature, shorter time, and acid marinades cut that load. Net effect is not the gram count. It is age, distribution per meal, what the protein displaced, and how it was cooked.
