Key pointers * 10 minutes without the lid stir frying and 10 minutes with lid to almost cook solids * 15 - 20  minutes on 165c 325f * Dry the spinach out as much as possible before adding Tips * generously season with salt and if desired pepper *  you can use a couple of tablespoons of milk to beat the baking powder into before adding to the eggs * Pecorino is as good as Parmigiana Advice * Add mushrooms for variety * Try to avoid overbrowning solids * Add a chopped fresh chilli in place of the dry flakes * to give it some extra flavour sprinkle a half handful of grated cheddar over the top before it goes in the oven
