Beef Stroganoff Serves 4 - 5 2oz Butter 1.5lbs Stewing Beef or Chuck or Topside 1 Medium Onion 8oz Sliced Mushrooms 2 Cloves of garlic 1 tablespoon Dijon Mustard  1 teaspoon of Thyme  1 teaspoon of Black Pepper 1 bay leaf 30oz Beef Stock / Broth 8oz Dry White Wine 300g Sour Cream / Heavy Double Cream 3 - 4 tbspns of regular flour for the paste Parsley & Chives for Sprinkle - optional  Please donate at buymeacoffee .com/archiepie PayPal - archiepqg@gmail.com Key pointers * Caramelise beef cubes as much as possible * Add Thickening paste gradually while stirring * Simmer for a few minutes after cream has come to the boil * Simmer slowly beef for 1hr45m -  if your beef isn’t tender, give it another 20 minutes * Scrape the sides of your casserole pot all those brown glaze stains are flavour Tips * Add double black pepper for extra spiciness * Thyme can be replaced with Mixed Herbs * If you like red wine then use it instead of white wine * A shot of brandy works wonders Advice * Don’t trim off too much fat from the beef it will disintegrate during cooking and deposit flavour * Serve with buttery Mashed Potato, Pasta or Rice * If Mushrooms aren’t desirable then add some diced green pepppers or corn * Great to freeze and reheats beautifully the next day
