Ethiopian cuisine is compelling and entrancing, ancient and unique. The country of Ethiopia is the birthplace of civilization, the place where the first humans emerged and a proud and fascinating country that is unlike anywhere else. In fact, of the 54 countries in Africa, it’s the only one to never have been colonized, and its cuisine reflects its history and independence. Except…is it really what it seems? Many of the country’s most famous stews seem to share characteristics- and ingredients- with Indian curries, as well as dishes found throughout Southeast Asia. So how did Asian ingredients, and Indian techniques, end up in the horn of Africa in the earliest days of modern history?
