Khao Yam might look like a salad, but it's so much more. Mixing coconut, lemongrass, chili, fermented fish, and rice with an endless variety of fresh herbs, fruits, and vegetables, it all combines into nothing less than a bite of Southeast Asia. It's no wonder that this dish is the pride of its home region. The problem is, for more than a hundred years, that region has been split in two by international borders, and both sides claim the dish- known as Khao Yam or Nasi Kerabu- as their own.
