Currently Playing: How Much Meat Do You Actually Get From One Deer?

One whole stag from Windsor Great Park, broken down into every cut by a master butcher. Here's exactly what one deer gives you, and why nothing goes to waste. Venison season opened in August and I've been waiting all year for this one. A two-year-old stag, about 30kg, straight from the gamekeepers at Windsor Great Park, where my family has bought venison for two generations. In this video I break the whole carcass down on the block: shoulders, neck fillet, haunch, rack and the boneless loin, which is the cut I sell more of than any other. Along the way you'll see the trade techniques most people never get to watch, from chining a rack to tying a roasting joint with a butcher's postman's knot. Every bone goes in the stock pot. Every trimming goes into sausages or burgers. Nothing gets wasted on my shift. WHAT EACH CUT IS FOR Rolled haunch: a roasting joint that feeds 8 to 10. Perfect for Christmas or New Year. Haunch on the bone: roast it in a tray for extra flavour from the bone. Rack of venison: French trimmed, feeds 2 to 3. Boneless loin: pan fry in butter with a little oil so the butter doesn't burn. No oven needed. Neck fillet and rump: dice for casseroles, just like beef. Shoulder and trimmings: sausages and burgers. Always add fat (pork back fat or beef fat) or they'll be too dry. Bones: roast them for colour, then make stock. It freezes brilliantly. MY VENISON LOIN SAUCE Sear the loin and keep the pan juices. Add venison stock, blueberries and a splash of port, then reduce. Serve with dauphinoise potatoes. TRADE TERMS EXPLAINED Haunch: the back leg. Chump: the rump end of the loin. Chining: removing the backbone from a rack. French trimming: scraping the rib bones clean so they stand proud. Flare fat: the internal fat from inside a pig. It wraps lean joints to keep them moist. No flare fat? Ask for pork back fat or use streaky bacon. Subscribe for more proper butchery, the way it's done behind the counter. Tell your friends. Online Shop 👉 https://lewismeat.com/
