A variation of my 3-Ingredient 10-Minute Mac and Cheese (https://www.seriouseats.com/2017/01/the-food-lab-3-ingredient-fast-easy-stovetop-macaroni-and-cheese.html), which uses a low-water method of cooking the pasta so that the concentrated starchy pasta water, evaporated milk, and grated cheese to emulsify into a creamy cheese sauce. I didn't have evaporated milk or blocks of cheese, so I used regular milk and sliced cheese (instead of grated) which... doesn't work as well. Regular milk lacks extra protein micelles so is not as good as evaporated for emulsifying. To fix the clumpy cheese sauce I added a dash of sodium citrate, an emulsifying salt you can order from Amazon or Modernist Pantry. Oh also I had kimchi and peas so I added those too. And some Marie's hot sauce from Malawi (thanks, Miranda). It was tasty.
