Sorry for the crappy audio. Not sure what happened there. Jetlag. I made some cacio e pepe for myself tonight when I got home after an 18-hour door to door trip. IB4 "It's not cacio e pepe because you added olive oil!" I don't care. I added olive oil because I like it and I like blooming the black pepper in it \so its flavor is a little deeper. Sometimes I also add butter. I'll call it what I want, you call it what you want, and we can both call it delicious, ok?
