It has 4x onions: - thin sliced and smashed into the patty - raw under the cheese (this is a good move) - fried shallots on top - fried shallot aioli on the buns It also has pickles. To make the fried shallot aioli, I make my basic garlic mayo recipe, but blend in a big handful of store-bought fried shallots at the start along with the eggs, then a big dash of fish sauce at the end. It's similar to the Fried Shallot Caesar Salad dressing recipe I wrote for the NYT recently.
