I made an omelette. It is kinda sloppy because I just got home from the karaoke bar. But sloppy omelettes taste preeeeeetty much like non-sloppy omelettes. I put a ton of Parmesan cheese in it. I had an old chef who used to do it with scrambled eggs and called it "oeufs aligot" after the famous cheesy potato dish, even though it's not really the right kind of cheese and it doesn't get the stretchy texture that dish does. But "oeufs aligot" is a much easier dish for waiters in a fancy restaurant to sell than "scrambled eggs with cheese." At least it was in the early 2000s.
