Egg Yolk Color Science: The color in egg yolks primarily comes from carotenoids, natural occurring pigments that are responsible for many of the yellow, orange and red colors in foods like carrots, pumpkins, red peppers and egg yolks. So when a hen eats carotenoid rich foods, the pigments are absorbed and transported via the bloodstream and into the developing egg yolks. Carotenoids don't change the taste or aroma of the egg yolk, but they will influence our sight!
