Modern recipe, based loosely on Charles Herman Senn’s New Century Cookbook (1901): INGREDIENTS For the rice: - 250g/½lb medium grain rice (such as risotto rice); - 150g/¼lb sugar; - 1l/2pt milk; - Orange flower water; - A little orange or lemon zest; - 2 tbsp butter; - 4 egg yolks For the apples: - 6-8 eating apples, of the Braeburn/Cox type; - Water (enough to cover the apples); - 4 tbsp sugar; - A jar of apricot jam or apricot purée To garnish: - Raisins, almonds, angelica, candied or crystallised cherries METHOD Rinse the rice and put it to cook with the sugar, milk, orange flower water, zest and butter. When it starts to simmer, put the pan in the oven for 20-25 minutes until it absorbs all the milk and becomes a soft, pillowy mass in which the grains should remain distinct. While still hot, mix in the egg yolks, being careful not to mash the rice too much. Spread around a third of this on a plate, and put the rest in a greased border mould before turning it out (you can also use your hands to shape it). While your rice cooks, peel and core the apples, and poach them gently in the water, vanilla and sugar until they are just cooked through. Remove from the syrup as soon as they're done. Fill the centres of the apples with apricot purée and arrange them neatly in the centre of your rice ring. Some can be cut into halves or quarters and arranged around the outside as well. Use the remaining garnish elements to form patterns around the apples – the dish should be bright and exuberant but the rice is the main feature.
