In this video, I go over recent scientific endeavors to understand the nature of aging in roasted coffee and how best to preserve its ideal state. This includes scholarship on bag material, degassing rates, oxygen and water vapor transmission rates, chemical changes within the bean, freezing, and more. The hope is for the viewer to walk away more educated on what best practices are for their given situation regarding bean storage and preferences. Apparently, the Aviary website was outdated when it said it used single LDPE layer (which is quite porous); Christopher Feran has since updated his site since chatting to note his bag is actually with the EVOH layer, making it incredibly robust for something recyclable. I am sure there are other examples- my statement was perhaps a bit too generalized and fastidious since most roasters I tend to consume or pay heed to lean in the direction of translucent and transparent bags or biodegradable bags. Commendable, but not doing the coffee many favors long term unless human intervention suggested in this video. Cheers!
