Spicy Dried Squid Strips (Jinmichae) Ingredients: * Main: 200g Dried squid strips * Sauce: 2 Tbsp Gochujang (Korean chili paste), 1 Tbsp Sugar, 2 Tbsp Cooking oil, 1 Tbsp Corn syrup (Oligosaccharide), 1/2 Tbsp Gochugaru (Chili powder), 1 Tbsp Minced garlic, 1 Tbsp Soju (or cooking wine). * Finishing: 1 Tbsp Peanut butter (or Mayonnaise), 1 Tbsp Sesame seeds, 1 Tbsp Sesame oil. Instructions: * Cut the dried squid strips into bite-sized pieces and rinse them in cold water. * In a pan, combine the soy sauce, gochujang, sugar, cooking oil, minced garlic, chili powder, corn syrup, and soju. Bring the mixture to a boil. * Turn off the heat. Add the squid strips to the sauce and toss to coat. Add peanut butter (or mayonnaise) and mix well. Finish by sprinkling with sesame seeds. 2. Fresh Kimchi (Geotjeori) Ingredients: * Main: 1 head of Napa cabbage (approx. 1100g), 1/2 cup Coarse salt. * Seasoning Paste: 1/4 Apple, 1/4 Onion, 3 Tbsp Salted shrimp (Saeu-jeot), 50ml Fish sauce (Anchovy), 1 Tbsp Cooked cold rice, 100g Gochugaru (Chili powder), 1 Tbsp Plum syrup, 2โ€“3 Tbsp Minced garlic, 1 tsp Ginger powder/minced ginger. (Let the seasoning sit for 30 minutes to mature). * Vegetables & Finishing: 80g Scallions, 1 Green onion (Leek), 1 Tbsp Sesame seeds. Instructions: * Remove the core of the cabbage, separate the leaves, and slice them diagonally into bite-sized pieces. * Layer the cabbage and salt alternately in a bowl. Let it brine (pickle) for 30โ€“40 minutes. * Blend the seasoning ingredients in a mixer and let the paste sit for at least 30 minutes. * Rinse the brined cabbage in water, drain thoroughly, and toss with the seasoning paste. * Cut scallions into 2cm lengths and mix them into the cabbage. * Cut the green onion into 2cm lengths, mix it in, and finish by sprinkling with sesame seeds. * Place in a container, let it sit at room temperature for one day, then move to the refrigerator. 3. Braised Tofu (Dubu-joram) Ingredients: * 2 blocks of Tofu * 40g Green onion or more (Scallions) * 1/2 cup Soy sauce * 1 Tbsp Minced garlic * A pinch of Black pepper * 1/2 cup Water * 1 Tbsp Sesame seeds * 1 Tbsp Sesame oil Instructions 1. Prepare the Tofu: * Drain the tofu and pat it dry with paper towels to remove excess moisture (Optional) * Cut the blocks into bite-sized rectangles (about 1cm or 1/2 inch thick). * Optional: For a firmer texture, lightly pan-fry the tofu slices in a bit of oil until golden brown on both sides before braising. 2. Make the Braising Sauce: * In a small bowl, combine the 1/2 cup soy sauce, 1/2 cup water, 1 Tbsp minced garlic, 1 Tbsp sesame oil, 1 Tbsp sesame seeds and a pinch of black pepper. * Finely chop the 40g of green onions and add them to the sauce. 3. Braise the Tofu: * Place the tofu slices in a wide, shallow pan (layer them slightly if needed). * Pour the sauce mixture evenly over the tofu. * Bring it to a boil over medium-high heat, then reduce the heat to medium-low. * Let it simmer for about 5โ€“10 minutes. Periodically spoon the sauce over the tofu so it absorbs the flavor evenly. 4. Final Touch: * Once the liquid has reduced and thickened slightly (but not completely gone), turn off the heat.
