We visited "Benkyodo," a long-established Japanese confectionery shop beloved in Fukuyama for years. In the café area, we tried the popular "Dango Zanmai" (Dango Sampler), where you grill the dumplings over charcoal to your own liking. It comes with three types of toppings: "Oyster Dashi Mitarashi" (soy-glaze sauce) that highlights the savory flavor of Hiroshima oysters, homemade chunky red bean paste (*tsubu-an*), and a *kinako* (roasted soybean flour) sauce made with *kinako* from Sera. We were particularly impressed by the Oyster Dashi Mitarashi—a flavor unique to Hiroshima! The aroma and savory richness coat the freshly grilled dumplings perfectly. We also tasted their signature treat, "Mugiko Kurikko": a crisp, light dough made with *hattaiko* (roasted barley flour) wrapped around smooth red bean paste (*koshi-an*) and a whole chestnut. We explore the secret behind the deliciousness that has been loved by locals across generations. Benkyodo prioritizes using ingredients from Hiroshima and the Setouchi region whenever possible, including Fukuyama-grown apricots from their own orchard. We also highlight the skills passed down by expert artisans and the shop's deep affection for the local community.
